bunch of wires - its easy stuff to figure out if you have skillz. but rpm is usually a pulse off the motor. Speedo on these is usually like a sensor that you put on the fork.wheel like a bisysle computer, then program in the right offset for wheel size, so its possible to accurately calibrate them. Water and oil temp/pressure requires jacking into the stock sensors or fitting separate sensors (water temp they make in in-line fitting that goes on the hose.)

My boss has one of those on his street legal YZ426F. Looks bitchin', never seen one on a sportbike, though.
